The first recipe has been kindly provided by Mrs Hong Xia Zhu. Fried rice with eggs and mushrooms. 150g rice one egg 5 dried Chinese mushrooms or fresh mushrooms 2 spring onions, sliced 0.5 dessert spoons of salt 3 table spoons of oil 1cm/0.5 inch slice of root ginger Before cooking, you must boil the rice with a little salt for about 20 minutes. Soak the dried mushrooms in cold water for 10 minutes and then dry them and chop them. Beat the egg and make sure the spring onions and ginger are ready. Heat one spoonful of oil in a wok, fry the egg for one minute. Put it on a plate. Heat two spoonful of oil in the wok, put the ginger in first, then mushrooms and fry them for 3 minutes. Add the rice, fry for 3 minutes. Then add the spring onions, fried egg and salt for another two minutes. Many people today accept and understand the concept of vegetarianism, those strange people who refuse to eat any meat or fish! It's a very popular diet amongst young people in Britain. Not as many people, however, understand the term VEGAN. People refuse to eat meat for a variety of reasons, but the most obvious one is because they believe it involves cruelty to animals either in the rearing process or the slaughter. Many people who are vegans believe that the use of animals to produce dairy products, such as milk, cheese and cream, also involves suffering and cruelty. There are, of course, people who refuse to eat meat and dairy products for health reasons, such as allergies. As a vegan, it can be quite difficult to eat out in restaurants, but cooking for yourself is easy. Watch out for our recipes in the next edition!
