
Chinese Fortune Cookies
Preparation time: 15 minutes.
Cooking time: 5 minutes.
You will need:
3 egg whites
½ cup icing sugar
45 g unsalted butter - melted
½ cup plain flour
Preheat Oven to 180 degrees Celsius. Line a tray with baking paper and draw three circles each of 8 cm in diameter on the paper.
- Place the egg whites in a medium sized bowl and whisk until they are frothy. Add the icing sugar along with the butter and stir until the mixture is smooth. Add flour and again mix until the mixture is smooth and then leave for 15 minutes. Using a flat bladed knife spread a thin layer of the mixture onto each circle on the baking paper. Bake for 5 minutes or until slightly brown around the edges.
- Working quickly, remove the cookies from the trays by sliding a flat bladed knife under each of them. Then place a written fortune message in each cookie.
- Fold the cookies in half, then in half again over a blunt edged object. Allow to cool on a wire rack. Cook the remaining mixture in the same way.
Storage Time:
Store for up to 2 days in an airtight container.
Hint:
Make cookies 2 or 3 at a time, otherwise they will harden too quickly and break when folding.
